One For The Fans!

Thank you so much for signing in. May all of your wishes find you and soon!

So, I'm contemplating a recipe file of low cal meals and snacks. Here's what we had for din-dins a few minutes ago. I dedicate this recipe to the marvellous followers of my blog, Kat in particular!

Low Calorie Parmesan Chicken And Broccoli (serves 4)

30ml olive oil
500g boneless, skinless chicken fillets, cubed
1 clove of garlic, minced/crushed
half teaspoon ground nutmeg
half teaspoon dried mixed herbs
30g Parmesan cheese, grated/shaved
300g broccoli florets, steamed
salt & pepper to taste
chopped fresh parsley and nasturtium flowers to garnish (optional)

Heat the olive oil in a large pan and brown the chicken cubes. Add the garlic and sauté for 1-2 minutes.

Add the nutmeg, herbs, salt, pepper and Parmesan cheese. Mix well.

Toss in the broccoli florets and serve. Garnish with chopped, fresh parsley and nasturtium flowers if desired.
