Tomato Soup!

To Whom It May Concern,

Here it is, as promised, the recipe for slimming tomato soup!

3 tablespoons olive oil
1 medium onion, finely chopped
1 clove of garlic, minced
1 stick of celery, finely sliced
2 tins (400g each) chopped, peeled tomatoes
700ml vegetable stock
2 tablespoons tomato purée
1 teaspoon basil, finely chopped (reserve a few leaves for garnish)
1/2 teaspoon smoked paprika (optional)*
salt and pepper to taste
In a large saucepan, heat the oil over a low heat. Add the onions, garlic and celery and heat gently for about five minutes

Pour in the tinned tomatoes, tomato purée and stock. Add the basil and smoked paprika (optional), salt and pepper and stir to combine all the ingredients.

Simmer gently for twenty to thirty minutes. Liquidise with a food processor or stick blender and serve, garnished with basil leaves. Serves four.

* I added the smoked paprika for flavour and warmth. It really adds wonderful depth to any tomato based dish, plus it gives you the delicious smokiness of bacon, but without the fat!
